How independent pubs can achieve consistent operating standards

A pub can be brilliant at four o’clock and chaotic at eight. Consistency is what turns occasional visits into a regular trade.

01

Why pubs drift

Long hours, part time teams and unpredictable trade mean the people and the pace change constantly. Without written standards, each shift invents its own.

02

Define good

How a pint is poured and presented. How each dish leaves the pass. How the bar is set before doors open. How guests are greeted at a busy bar. Photograph the correct result and put it where the team works.

03

Build it into the shift

Opening and closing checklists, a short briefing and a mid shift walk around keep standards visible when it gets busy, which is exactly when they matter.

04

Lead from the floor

If the duty manager checks the cellar, tastes the food and talks to guests, the team follows. If they do not, no document will save it.

If the duty manager does not check it, no document will save it.
  1. Photograph your perfect pint and your best selling dish.
  2. Introduce a five minute pre shift briefing.
  3. Add a mid shift walk around to the duty manager’s routine.

Eight Rabbits gives pubs one operating standard across food, bar and service, built for the reality of busy, changing teams.
